This has been an absolute game changer for me - a nice easy swap to try!

I only discovered using mushroom mince this year and it has changed so many of my recipes for the better! I hadn't really come across many recipes that had mentioned it before. I am so glad I started using it as my Bolognaise, Lasagne and Chilli have certainly levelled up.
By blending the mushrooms to create this minced effect you release such a lot of flavour, it really lifts the dish you are adding them to.
A really nice swap to try for those quick mid week meals - the boys are big fans of mushroom mince so it is fully approved in our house!
How do we do it?
This is one of the easiest swaps you can make when cooking dishes like Chilli, Spaghetti Bolognaise and Lasagne (All these recipes will be coming soon!)
Pop your mushrooms in a blender or food processor and blend until you have tiny pieces. You can of course chop them up finely using a knife, it will just take a little longer. If using a blender, be careful not to blend them so much that they start to go mushy.
Fry up your onions, garlic and anything else you are using for your dish and pop the mushroom mince in to substitute your meat mince. Try using lentils too to bulk out the dish and to increase the protein content too.

Great herbs and spices to use to enhance the flavour of the mushroom mince in the dishes mentioned above are Rosemary, Thyme, Oregano and Basil.
Mushroom mince is a much cheaper and healthier alternative to meat mince, vegetarian or plant based processed mince substitutes. Especially teamed with beans or lentils it will provide a good protein source (We will be talking more about this soon!)
300g Mushrooms = 9.3g protein
Can of Lentils = 14.6g protein
Can of Kidney Beans = 16.4g protein
Mushrooms also contain fibre, B Vitamins and selenium which is an antioxidant supporting our immune system, some are also known to contain Vitamin D so they are a great choice to ensure we have in abundance in our diets.

I'll be sharing some of my favourite recipes using mushroom mince very soon but for now perhaps try using it in your next Spaghetti Bolognaise or Lasagne :-)
