Cabbage Rolls

Sticky, flaoursome rice wrapped in nutritious cabbage rolls!


I love a stir fried rice and wanted to experiment with cabbage rolls and voila! This is the creation.


Really yummy, loads of veggies and using the cabbage is a much healthier version than using a bread wrap.


You can add in your preferred veggies, I've just listen below what I used on this occasion and it worked really well.

How do we do it?

Tasty rice wrapped in green goodness!


Recipe

  • 1 Cup Brown Rice (sticky rice works well too)

  • 1 Tbsp Sesame Oil

  • 1/2 White Onion

  • 2 Garlic Cloves

  • Thumb Ginger

  • 1 Red Pepper

  • Handful Mushrooms

  • 1 Carrot

  • 1/2 Courgette

  • Handful Cashews

  • 1 Tbsp Maple Syrup

  • 1 Tbsp Soy Sauce/Tamari

  • 1 Tbsp Tomato Puree

  • 1 Tbsp Sriracha

  • 1 Tbsp Coconut/Brown Sugar

  • 6 Large Cabbage Leaves

  • Drizzle Olive Oil

  • Sesame Seeds for Serving


Method

1. Prepare your rice and leave to boil/steam.


2. Roughly chop the onion. Heat sesame oil in a pan and fry onions with a pinch of salt until they become soft and translucent.


3. Add in crushed garlic and finely chopped ginger and fry for around 5 minutes.


4. Roughly chop all veggies and add to the pan to fry up until they are softened.


5. Once the rice is done, drain and add to the fried veggies. Stir well to combine.


6. Next add the maple syrup, soy sauce/tamari, sriracha, tomato puree and coconut/brown sugar and stir in to combine all ingredients and ensure all rice and veggies are covered.


7. Take your cabbage leaves wash and trim any thick stem from the bottom. Blanche for around 45 seconds to soften.


8. Lay cabbage leaves flat and spoon in rice and wrap like you would a fajita.


9. Once all leaves are filled and rolled, put them into an oven dish and lightly brush each roll with a little oil and grill until slightly browned.


10. Sprinkle with sesame seeds and enjoy!


Tips

Don't over boil the cabbage leaves you want them to be firm and not break up when you roll them.


Feel free to use the veggies and rice of your choice.


Don't over grill, the cabbage will catch pretty quickly so keep a good eye on it!


Also only lightly brush the cabbage with oil before grilling otherwise the leaves will get a bit too soggy.
