Apple & Cinnamon Baked Protein Bars

Protein packed with comforting autumnal flavour.


These are a great, healthy and tasty way of getting more protein in to your snacks throughout the day.


They are so quick and easy to make so great to whip up if you are short of time and also great for on the go.


A nice one for the kiddies to help make and eat too!


You can make these without the protein powder too, they still work really well.

How do we do it?

Super tasty and easy... let's do this!!

I used a 17cm x 28cm oven proof dish for this recipe.


Recipe - makes around 12-15 Squares

  • 2 Flax Eggs (2 Tbsp ground flax seed & 2 Tbsp Water)

  • 1 Banana

  • 1 tsp Vanilla Extract

  • 1 tsp Cinnamon

  • Cup Plant Milk

  • 1 Tbsp Maple Syrup

  • ½ tsp Baking Powder

  • 2 Cups Oats (Can use GF)

  • 2 Scoops Protein Powder

  • 1 Apple

  • 1/8 Cup Raisins

  • 1 Carrot


Method

1. Preheat oven to 180°C and line baking dish with baking paper.


2. In a small bowl, prepare flax egg by combining flax seed and water and set aside.


3. In a large bowl, mash banana, grate the carrot, dice the apple into small chunks and then add in all the rest of the ingredients including the flax egg.


4. Mix well and pour out into baking dish. Spread to around 2 cm thickness.


5. Bake for around 20-30 minutes or until golden brown. The oats will slightly harden on top but be soft and squidgy on the inside.


6. Remove from the oven, drizzle with nut butter, cool and chop into bars or squares for snacking.



Tips


Ensure you don't spread the oats too thinly in your baking dish. The mixture is very thick so won't run and means you can shape it and spread it as you wish.

I used a 17cm x 28cm dish but didn't spread the mixture out over the whole dish otherwise it would have been too thin.


Store the bars in an airtight container and consume within around 3-4 days. These are suitable for freezing also.
