Roast Veg & Butter Bean Soup

Delicious wintery comfort food.

This soup is a total winner, super comforting with great flavours from the sweetness of the potatoes, a little spice from the cayenne and the soft texture of the butter beans...delicious!
It's really quick and easy to make and great to make in a big batch for freezing.
Definitely one to make for a chilly evening!
How do we do it?
Some of the fam aren't great with heat so I left out the chillis and sprinkled some chilli flakes on my bowl once served.
Traditionally you would add fesh chillis to the laska paste so do add those to your taste :-)
Recipe - Serves 3-4 c. 300 cals per serving
3 Cups Sweet Potatoes
1 Large Red Bell Pepper
300g Cherry Tomatoes
3 Garlic Cloves
Pinch Salt
1 Tbsp Olive Oil
Sprinkle Rosemary
Pinch Black Pepper
Pinch Cayenne Pepper
Pinch Paprika
200ml Plant Based Milk ( I used almond)
Stock
240g Tin Butter Beans

Method
1. Preheat oven to 200°C.
2. Peel the sweet potatoes and roughly chop into cubes. Place in a roasting tin or on an oven tray, sprinkle with rosemary and drizzle with olive oil, place on the top shelf of the oven and roast until softened.
3. Roughly chop red pepper and tomatoes, place in a separate roating tin and sprinkle with a little salt and drizzle with olive oil. Peel garlic cloves and place in with the pepper and tomatoes, roast for around 15-20 minutes until softened
4. Once all veggies are cooked, place them in a food processor with the black pepper, cayenne, paprika a pinch of salt and the almond milk.
5. Once blended well and you have a smooth consistency, transfer to a saucepan and simmer down. Add the tin of butterbeans then add the stock if needed to reach your preferred soup consistency.
6. Let the soup cook until bubbling then serve and enjoy!
Tips
Ensure the sweet potato is nice and soft all the way through before blending, it makes it much easier.
Store in the fridge in an airtight container and consume within 3 days.
