Apricot & Red Onion Chutney

Punchy, sweet and savoury!

I've never made chutney before, I don't really eat it that often but I was really inspired to make this after a trip I took to Scotland and had some amazing chutney in a dish.


So happy with this one, love all the deep flavours and sweetness, it's really perfect!


It's super easy to make, you just need to leave it for a while to cook down so give yourself an hour or so to prep and cook

How do we do it?

Hands down one of the best chutneys I've had. Super proud of this recipe!


Recipe - Makes 1 jar

  • 280g Apricots

  • 1 tsp Cinnamon

  • Pinch Black Pepper

  • Pinch Salt

  • 1/8 tsp Ground Cloves

  • 1 Red Onion

  • 1 Garlic Clove Crushed

  • Thumb of Fresh Ginger

  • 2 Tbsp Apple Cider Vinegar

  • 1/2 Cup Raisins

  • 2 Tbsp Maple Syrup

  • 2 Tbsp Brown Sugar

  • 1/2 Cup Water


Method

1. Halve and stone the apricots then chop them into small pieces.


2. Peel and finely chop the onion and finely chop the ginger.


3. Add all ingredients to a pan and stir well. Simmer on a low heat until the consistency has thickened like a jam and the apricots and onions are nice and soft. This will likely take around an hour. Keep stirring throughout.


4. Once the chutney is ready, let it cool and spoon into an airtight container.


5. Store in the refrigerator and enjoy!



Tips

Ensure you give the chutney plenty of time to cook down, it can be time consuming but worth it!
