Awesome Banana Curry

This curry is out of this world!!!

This curry is not only a beautiful looking curry, it is bloody delicious.
So many amazing flavours and colours. The banana adds such a great sweetness to the savoury spices.
I made my own curry paste but if you were short for time I think a shop bought thai red curry paste would work :-)
How do we do it?
This is my all time favourite curry to make, it is packed full of veggies and amazing flavours.
Recipe - Serves 4
Curry paste
1 tsp Mustard Seed
1 tsp Tumeric
1 tsp Garam Masala
1 tsp Ground Corriander
1 Tbsp Soya Sauce/Tamari
2 Tbsp Tomato Puree
Thumb Fresh Ginger
2 Garlic Cloves
1 Tbsp Peanut Butter
Pinch Black Pepper
Veggies
1 Tbsp Olive Oil/Coconut Oil
1 White Onion
Pinch Salt
250g Mushrooms
1 Courgette
1 Red/Yellow Pepper
2 Carrots
Handful Broccoli Florets
Handful Cherry Tomatoes
1 Stick Celery
1 Can Chickpeas
1 Can Butter Beans
1 Can Coconut Milk
Pinch Chilli Flakes
1 Cup Peas
1 Banana
Handful Spinach

Method
1. Start by preparing your curry paste. Add all ingredients for the paste into a blender and whizz up till well combined. Set aside.
2. Heat oil in a pan, roughly chop onion add to pan and fry with a pinch of salt.
3. Roughly chop your veggies. Once the onions are soft and translucent add mushrooms, courgette, pepper, carrots, cherry tomato, broccoli and celery to the pan and fry up together.
4. Next, add in your curry paste and stir well.
5. Once veggies and curry paste are well combined, add coconut milk, chickpeas and butter beans and stir well. I generally add the water from the canned chickpeas and butter beans then let it cook off later.
6. Sprinkle in chilli flakes and add the peas. Stir well.
7. Chop your banana into slices and add to the curry. Stir well and let it simmer for around 15-20 minutes. If you want to reduce some liquid, simmer without a lid.
8. Drop in a handful of spinach and stir until wilted.
9. Serve with brown rice and a wedge of lime. Enjoy!

Tips
Ensure your curry paste is well blended so it forms a smooth consistency.
Play around with the veggies, use what you have available in the fridge! Sweet potato and butternut squash also work really well in this dish.
I usually make a batch of this curry and have 2 days in a row. The flavours really marinade over night so it's super delicious on day 2!
