Cherry Bakewell Bites

New take on a classic!

I have always loved cherry bakewells, the marzipan flour is something I've always enjoyed and paired with the tartness of the cherries it's just perfect!
Aside from the marzipan these are a slighly healthier version!

How do we do it?
The classic combo of cherry and marzipan...delicious!
I used a 17x28 oven proof dish for this recipe.
Recipe - makes around 16-20
Base:
2 Cups Almond Flour
3 Cups Oats (Can use GF)
2 tsp Baking Powder
1/2 Cup Maple Syrup
1/2 Cup Coconut Oil
1 Tsp Vanilla Paste/Extract
Filling:
150g Marzipan
4 Cups Cherries (Fresh or Frozen)
2 Tbsp Lemon Juice
2 Tbsp Lemon Zest
1 tsp Vanilla Extract
6 Tbsp Cornstarch

Method
1. Preheat oven to 180°C and prepare your brownie tin/ oven proof dish by lining it with baking paper, grease the paper a little.
2. Add all ingredients for the base into a blender and blend till combined. Alternatively you can combine in a large bowl and stir well.
3. Press the ingredients for the base into your dish, leaving around a cup to crumble on top afterward.
4. Next, roll out your marzipan and lay on top of the base layer. Use more if you like a thicker marzipan layer.
5. Once your base layer is complete, set aside and begin making the cherry filling.
6. Over a low heat add the cherries, lemon juice,zest and vanilla. Stir well until the cherries start to break up, you can mash them a little also. If you prefer your mix sweeter then you can a little sweetner such as coconut sugar, agave, maple syrup etc. Add the cornstarch and stir well until the mixture begins to thicken. I found I had quite a lot of liquid as I used frozen cherries so I did drain them a little before pouring over the base layer.

7. Pour cherry filling over your base layer and spread evenly.
8. Use the remaining base to crumble over the top of the cherry filling.
9. Cook in the oven for around 25-30 minutes or until the oats have turned slighly golden.
10. Let them fully cool and set - give them a good while to let the filling set otherwise it will get messy!
11. Store in an airtight container and enjoy! (Also suitable for freezing)

Tips
Really let the bakewells cool before removing from the dish and cutting up, if they are too hot then the filling won't have set and they will likely collapse as you try to lift them out!
You can pop them in the fridge or freeze to aid the setting process if needed.
