Choc Chip Cookies

Classic cookies- vegan style!


Who doesn't like classic cookies! Kids and adults will love these little treats. Crispy on the outside, chewy on the inside.


These are super quick & easy to make so it's a nice recipe to get little chefs involved.


Mix them up with dark choc, white choc, nuts or anything else you fancy...vegan of course!


How do we do it?

Chocolatey goodness - crispy on the outside, soft on the inside... totally perfect cookies!


Recipe - Serves 15 large cookies

  • 150g Vegan Butter (softened)

  • 80g Brown Sugar

  • 80g Caster Sugar

  • 2 tsp Vanilla Extract/Paste

  • 1 Flax Egg (1 Tbsp Flax Seed + 3 Tbsp Water)

  • 225g Plain Flour

  • 1/2 tsp Bicarbonate of Soda

  • Pinch Salt

  • 200g Chocolate Chunks


Method

1. Preheat oven to 180°C and prepare an oven tray by lining it with baking paper.


2. Prepare flax egg by mixing milled flax seed with water and let it stand for 5 minutes or so.


3. In a bowl add butter and all sugar. Mix well to combine until you create a creamy consistency.


4. Next, mix in vanilla and flax egg, stir well to combine.


5. Once well combined, sift in the flour, bicarbonate of soda and salt, stir well.


6. Add in your chocolate chunks/chips and stir them in to ensure they are distributed well throughout the mixture.


7. Take a spoonful of cookie dough at a time and place on the baking tray, spaced well apart to allow for expansion whilst cooking.

8. Cook until slightly golden. If you like your cookies very crispy then cook for longer!


9. Remove from the oven, let cool and store in an airtight container.


10. Enjoy with a cuppa!


Tips


These cookies freeze well, so great to make in a big batch.


They really spread out when cooking so if you want to make smaller ones then just take smaller spoonfuls of mixture.


White chocolate works well for these cookies too!
