Chocolate Biscoff Brownies

Mouthwatering, chocolatey goodness!


What could be better than biscoff and chocolate...basically nothing, these are amazing!


Rich, fudgey and super easy to make. A great one to get little chefs invovled and keep big tummies happy too!!


An absolute winner in our house as a weekend treat with a cuppa.


They freeze really well too so go get making a big ol' batch!



How do we do it?

Gooey chocolateyness- I used a 17cm x 28cm brownie tin/dish.


Recipe - makes around 16

  • 3 Ripe Bananas

  • 1 Tsp Vanilla Paste/Extract

  • 220g Vegan Butter

  • 200g Cocoa Powder

  • 2 Tbsp Almond Milk

  • 400g Coconut Sugar

  • 150g Plain Flour

  • Sprinkle Salt

  • 100g Vegan Milk Chocolate Chips/Chunks

  • Biscoff Spread


Method

1. Preheat oven to 180°C and prepare your brownie tin/ oven proof dish by lining it with baking paper.


2. Mash bananas in a bowl and add in vanilla essence/paste.


3. Melt butter on a low heat, stir well until it has completely melted. Add the cocoa powder to the butter and stir constantly until well combined.


4. Next, add your bananas to the mix and stir well. Add sugar and milk and stir well to ensure all ingredients are combined.


5.Add the flour and pinch of salt to the rest of the mixture and stir well. Once everything is combined add in your chocolate chips/chunks, again stirring well.


6. Pour the brownie batter into your prepared tin. Spread the biscoff over the top of the batter, make it to your taste. You can create a marbled effect by swirling the biscoff spread through the batter.


7. Place brownies in the over for around 40 minutes.


8. Once the brownies are cooked through, remove from the oven and let cool. Once cooled, cut into squares and enjoy!

9. Store in an airtight container. Also suitable for freezing.


Tips

If you don't have coconut sugar you can use brown sugar. You can also use any other plant milk if you don't have almond.


I used vegan milk chocolate chunks but feel free to use dark chocolate.
