Chocolate Blondies

Delicious little treats!


Ok so this was the first time I have ever made blondies and I'm pretty sure actually the first time I've ever eaten one!!


Absolutely love these, not too sweet, perfect combination of vanilla and white chocolate.


Coconut sugar also adds such a great richness, I love baking with it.


Enjoy these little bites of deliciousness!




How do we do it?

Delicious chocolatey treats! I used a 17cm x 28cm brownie tin/dish.


Recipe - Makes around 16 slices

  • 2 Flax Eggs (2 Tbsp ground Flax Seed + 6 Tbsp Water)

  • 1 1/2 Cups Coconut Sugar

  • 2 Tbsp Vanilla Paste or 1 Tbsp Vanill Extract

  • 1 Cup Vegan Butter (melted)

  • 370g Plain Flour

  • 1 tsp Baking Powder

  • 1/2 tsp Salt

  • 100g Vegan Milk Chocolate

  • 200g Vegan White Chocolate

  • Drizzle of Smooth Peanut Butter


Method

1. Preheat oven to 180°C and prepare your brownie tin/ oven proof dish by lining it with baking paper.


2. Prepare flax egg by mixing milled flax seed with water and let it stand for 5 minutes or so.


3. In a bowl add sugar, flour, vanilla paste/essence, butter, baking powder and salt. Mix well to combine all ingredients.


4. Add in the flax egg and stir well to combine.


5.Next add in white chocolate. Either use white chocolate chips or break up a bar of white chocolate.


6. Place your blondie mix in your prepared dish and spread evenly, you can place some more chocolate chip/chunks in the top of the mixture before then placing it in the oven for around 25minutes. Keep checking your blondies by inserting a knife in the centre. Once the knife comes out clean or with just a few crumbs the blondies are ready!


7. Remove blondies from the oven and let them cool.

8. Once they have cooled it's time to prepare your chocolate to drizzle on top. Melt both the milk and white chocolate together - you can do this in the microwave or bain-marie. When the chocolate is melting don't mix it together too much, you still want to identify the two colours of chocolate and create a marbled effect with the white chocolate running through the milk chocolate, so only light stirring.


9. Once the chocolate is ready, pour it over the top of your blondies and spread evenly.


10. Drizzle some smooth peanut butter through the chocolate and then place the blondies in the fridge until the chocolate is set.


11. When you are ready to cut your blondies, let them settle at roomp temperature for a little while so that the chocolate doesn't crack when you cut them.


12. Store in an airtight container and enjoy! Also suitable for freezing.



Tips

You can find vegan white chocolate in the supermarket, usually in the free from section. Aldi have started doing a great range of vegan chocolate for £1.50 for a large bar.


If your peanut butter is quite thick feel free to add dollops on top instead of a drizzle. If you aren't a peanut butter fan either sub in another nut butter of your choice or omit it completely.


The blondies freeze and defrost well so they are great to make in a big batch!
