Chocolate Coconut Bites

Decadent, creamy treats!


These are like super creamy Bounty bites! Sooo good.

I love making healthy treats, these are rich and creamy so they really satisfy those sweet cravings and are full of good fats.






How do we do it?

Mouthfuls of creamy, chocolatey, coconutty goodness!


Recipe - Makes around 8-10

  • Cream From 1 Can Full Fat Coconut Milk

  • 1 Cup Dessicated Coconut

  • 1/2 Cup Coconut Flour

  • 2-3 Tbsp Maple Syrup

  • 100g Dark Chocolate

Method

1. In a large bowl combine the cream from the can of coconut milk, dessicated coconut, coconut flour and maple syrup.


2. Stir well to ensure all ingredients are evenly combined. Do a taste test to check they are sweet enough for you! If not add more maple syrup.


3. Take a table spoon of the mixture and roll into a ball, repeat this process until all mixture is used.


4. Next melt the chocolate on a low heat, be sure to keep the heat low so the chocolate melts well.


5. Prepare some grease proof paper and place on a small tray or plate that will fit in your refrigerator or freezer.


6. Take one coconut ball at a time and roll it in the melted chocolate to cover well. Once covered, pop it on your prepared tray or plate.


7. Repeat for all coconut balls and when all are covered and placed on the tray or plate, put them in the refrigerator or freezer to allow the chocolate to harden.


8. Once the chocolate has hardened you can store in the fridge in an airtight container.


9. Serve & enjoy!


Tips

Feel free to add more maple syrup to your coconut balls if you want to sweeten them further.


Other flours such as almond would work too if you don't have coconut flour.


Ensure your chocolate is melted on a low heat otherwise if it gets too hot it starts to turn to a paste and makes life tricky!
