Chocolate Orange Brownies

Gooey, chocolatey goodness!

These brownies are super rich and taste great with a hint of orange!
They're pretty simple to make and won't take too long either.
I tried to use slightly healthier options such as coconut sugar and coconut flour but I'll note options in the tips section as there's plenty of alternatives that work well too!
A nice one to make with the kiddies too, so go get baking and munching!
How do we do it?
Delicious chocolateyness! I used a 30cm x 19cm brownie tin for this recipe.
Recipe - makes around 16-20 squares
3 Ripe Bananas
1 tsp Vanilla Extract/Vanilla Essence
250g Vegan Butter
150g Cocoa Powder
50g Cacao Powder
200g Coconut Sugar
1 Orange
150g Coconut Flour
1 Cup Choc Chips/Chunks
Plant Milk (Add 1 Tbsp at a time)

Method
1. Prepare a brownie tin/freezer proof dish with a sheet of baking paper and pre heat the oven to 160°C
2. Mash the bananas in a bowl and add vanilla extract, stir well.
3. Melt butter on a low heat and add in both the cocoa and cacao powders. Still well to combine.
4. Next add in the banana mixture to the chocolate mixture and stir well to ensure all ingredients are combined.
5. Add in 1 Tbsp of plant milk and stir well. Do this until you get a nice smooth consistency.
6. Next, pour in the coconut sugar and mix well.
7. Squeeze the juice of your orange into the mixture and stir. Keep on a low heat.
8. In a separate bowl measure out your coconut flour. Remove chocolate mix from the heat and pour it over the coconut flour. Mix well.
9. If the mixture is a little thick, drizzle in some plant milk and stir well until you get a smoother consistency.
10. Add in the chocolate chips and grate in some orange zest to taste. Stir well.
11. Bake for around 30 minutes and once cooked, allow to cool then chop up into squares and store in an airtight container. Enjoy!

Tips
For the butter I prefer using a block rather than spreadable.
Add the plant milk until the brownie batter becomes smoother, don't add too much so that it becomes too runny.
You can sub in other ingredients eg caster or brown sugar will work too.
If you are subbing in plain flour you may need to add more than the recipe states as coconut flour is super absorbent so add a little at a time until you get the right consistency.
Feel free to also just use cocoa powder if you don't have any cacao or like your brownies a little sweeter!
If you like them extra orangey, feel free to add in more juice and zest too.
I know they are super tasty looking, but make sure you allow them to cool before cutting and eating :-)
