Chocolate Peanut Butter Cheesecake

Chocolatey, nutty & delicious dessert

I have always loved cheesecake and here is a delicious, raw, vegan version!


Chocolate & peanut butter is always a winning combination and this is so simple to make but feels like a really extravagant dessert.


A great one for a centre piece at a dinner party or special occasion!



How do we do it?

Decadent, delicious but simple! I used a 7" cake tin with removeable base.


Recipe - Makes a 7" cake


Base Layer

  • 2 Cups Oats

  • 15 Dates (10 Medjool Dates)

  • 1 Tbsp Maple Syrup

  • 2 Tbsp Peanut Butter

  • 1 Cup Almonds/Pecans


Cheesecake Layer

  • 1 Block Silken Tofu (349g)

  • 2 Tbsp Maple Syrup

  • 1/8 Cup Cacao Powder

  • 1 tsp Vanilla Extract

  • 1/2 Cup Cocoa Powder

  • 1/2 Cup Icing Sugar (option if you like it sweeter)

  • Drizzle Smooth Peanut Butter


Method

1. Add all base layer ingredients to a food processor and pulse until all well combined.


2. The mixture should bind together well and not be falling apart.


3. Line a loose bottom cake tin with greaseproof paper on the base and around the sides.



4. Press the base ingredients down into the cake tin, ensuring it is evenly spread.


5. Refrigerate whilst making the cheesecake later.


6. Add all cheesecake ingredients (except peanut butter) to the food processor and blend well. If you like it quite sweet add more icing sugar - you can test it as you blend.


7. Once everything is well combined, pour the cheesecake mixture in to the cake tin on top of the base layer. Ensure it is evenly spread.


8. Drizzle peanut butter over the top and use a spoon to mix it into the chocolate, creating a marbled effect.


9. Freeze until the cheesecake layer hardens. Serve and enjoy!


10. Store in the refigerator and consume within 2-3 days.





Tips

If the base layer seems too crumbly you can add a sprinkling of water or plant milk to combine it before pressing it into the cake tin.


Using a cake tin that has a removeable base makes life a lot easier for this recipe!


My peanut butter for drizzling was fairly thick so if you need to thin it out for spreading, add a little cold water or plant milk to thin it out and make it easier for drizzling on the top.
