Creamy 'Bacon' Fettucine

Protein packed and full of intense flavour!


Oh my gosh this recipe is the absolute goat!!


It was the first time I'd tried the 'This' isnt bacon lardons and they did not disappoint.


A perfect bowl of creamy, protein packed goodness, perfect for a weekend treat.



How do we do it?

Arm yourself with great ingredients and let's do this!!


Recipe - Serves 2 | c.415 cal | 25.65g protein

  • 1 Tbsp Olive Oil

  • 1/2 White Onion

  • Pinch Salt

  • 2 Garlic Cloves

  • 100g Mushrooms

  • Whole Pack of 'This Isn't Bacon' Lardons

  • 3 Sundried Tomatoes

  • 150ml-200ml Oatly Oat Cream

  • 1 tsp Dijon Mustard

  • 1 Tbsp Nutritional Yeast

  • Sprinkle Black Pepper

  • 100g Fettucine (I used The Foodie Market's Edamame Fettucine)


Method

1. Finely chop the onions and mushrooms.


2. Next, heat oil in a pan and once hot add in onion, a pinch of salt and crushed garlic cloves. Fry until onions until they soften and become more translucent.


3. Add in the mushrooms and stir well. Fry up for around 3-5 minutes then add in the 'bacon' lardons.


4. Stir well and fry for a further 3 or so minutes.




5. Chop up sundried tomatoes and add to the pan. Pour in oat cream and stir well. Add the dijon mustard, nutritional yeast and black pepper and stir.




6. Simmer on a low heat for around 5 minutes.


7. Cook fettucine and as per packet instructions, drain and add to the pan. Keep on a low heat and mix well so that the fettucine is covered in the creamy sauce.


8. Drizzle a little more oat cream if desired and serve!


9. I added a couple of crushed pecans to garnish! Enjoy.





Tips


I used protein fettucine made from edamame and mung bean to add some extra nutrients to the dish. You can find it in Aldi.


I also used Oatly oat cream and This Isn't Bacon Lardons.


Don't over cook the fettucine, it doesn't need long in the pan once you combine it with the rest of the ingredients.
