Crispy Sweet Potato Sushi

Crispy deliciousness!


I think sushi was the thing I missed most when I went vegan as I am absolutely obsessed with it. I'd never really had great veggie sushi so it was important to me to come up with something really yummy I coud make at home.


It takes some practise and patience but it's totally worth it.


Make sure you have all the extra bits you need for rolling the sushi - you can generally get everything from the supermarket.


How do we do it?

This recipe is just how to make the filling for the sushi rolls. Please follow a recipe you like for preparing the actual sushi rice, however I'll list what you'll generally need here. I followed this sushi rice recipe here purely because it was quick & simple.


Recipe - makes around 3 sushi rolls (c.21 small pieces)


Sushi Filling

  • 1/2 Cup Cornflour

  • 1 tsp BBQ Seasoning

  • 1 tsp Garlic Powder

  • 1 tsp Smoked Paprika

  • Pinch of Salt

  • Pinch of Pepper

  • 1/2 Cup Plant Milk

  • 3 Cups Panko Breadcrumbs

  • 2 Tbsp Olive/Coconut Oil

  • 2 Sweet Potatoes

  • Cucumber

  • Avocado

  • Sriracha Mayo

Sushi Rice & Extras:

  • 1 Cup Sushi Rice

  • 1.2 Cups Water

  • 2.5 Tbsp Rice Vinegar

  • 1/2 Tbsp Sugar

  • 1/2 tsp Salt

  • Bamboo Roll Mat

  • Nori Sheets

  • Cling Film

Method

1. Prepare your sushi rice and set aside.


2. Chop sweet potatoes into long slices around 1cm width. Place in boiling water for around 10mins to help soften.


3. Whilst the sweet potato is boiling, begin to prepare your batter. Mix the cornflour, bbq seasoning, garlic, paprika, salt, pepper and plant milk together. Mix well with a whisk to get rid of any lumps.


4. Remove sweet potato from the hob, drain and dry off with kitchen towel.


5. Heat oil in a frying pan.


6. Take a strip of sweet potato and dip it in the prepared batter so it is well covered.

7. On a separate plate or dish, pour out your bread crumbs then roll your battered sweet potato in the crumbs to cover fully.


8. Place in the frying pan and cook until the breadcrumbs are golden brown.


9. Repeat this process for all strips of sweet potato.


10. Prepare your avocado and cucumber by cutting into long thin strips and get your sriracha mayo ready for drizzling inside the sushi roll.


11. Next it's time to assemble and roll the sushi. This is a clear video on how to assemble


12. Enjoy with wasabi and soy sauce!



Tips

Don't over boil the sweet potato, you need it to be firm enough not to break apart when you roll in the batter and breadcrumbs.


It takes some practise rolling the sushi rolls. From past experience don't over fill them otherwise it's a nightmare to roll!! Watch the video instructions a few times before giving it a go and follow step by step :-)
