Delicious Protein Pancakes

Quick, easy & healthy pancakes!


These pancakes are a dream. They are so simple, full of protein with all good ingredients yet taste so decadent.


They make a great breakfast , lunch or brunch option and kids absolutely love them! I make these for the boys all the time and they actually prefer these to 'normal' pancakes now.



Even their fussy friends have loved them and couldn't tell they were a healthy version of American pancakes!


How do we do it?

These are such a quick treat to whip up, full of goodness plus you can get creative and top them with whatever you like! They're quite dense so are a nice filling meal, I love them for a Sunday brunch with a big cup of tea. A simple, fun recipe to get the little ones involved with too.


Recipe - makes 3 pancakes

  • 1 Banana

  • 1 Scoop Vanilla Protein (my favourite is Arbonne- Chocolate protein also works!)

  • 1 Cup Oats (can use GF oats)

  • 1 Cup Plant Milk

  • 1 Tbsp Coconut/Olive Oil


Method

1. In a blender add the banana, protein powder, oats and plant milk.


2. Blend until all ingredients are well mixed and form a batter.


3. Heat oil in a non stick pan. When it's nice and hot, split the batter into about 3 and pour into the pan. If you have space in your pan you can cook all pancakes together, if not then cook them separately.


3. Ensure you flip the pancakes to cook both sides and use a slotted turner to press down to ensure the pancakes cook through.


4. Once the pancakes have cooked through and have a light brown crisp on the outside, remove from the pan, stack and serve with fruits, maple syrup, nut butter, plant based yoghurt and more!



Tips

Once you've blended your ingredients you can always add a little more oats if you feel it is too runny or more plant milk if you feel it is too thick.


When pouring your batter into the pan don't spread it too thinly, remember these are American style pancakes so can be quite thick.


Use a good non stick pan to make the flipping and cooking easier - you don't want the batter to stick and burn.


You can make these with chocolate protein powder too or if you don't have protein powder at home you can always make them without, you will just of course be taking in less protein.

My favourite protein to use is one by Arbonne as it tastes amazing, isn't grainy, plus it has lots of added extra vitamins and minerals so it really adds alot of nutritional value to your cooking. If you want to try it check it out here and get in touch for Vegan Thingz discounts!



If you are making pancakes for the family or if you have a family sized appetite like me (!) unless you have pans and hobs galore you aren't going to be able to make all pancakes at once! I like to put the oven on low and pop in any pancakes that are ready to keep them warm whilst I make the rest. You can then serve them all together, nice and warm.
