Easy, Tasty Laksa

One of my favourite meals by far!

Laksa is a gorgeous spicy noodle dish popular in Southeast Asia. I had a delicious Laksa in a restaurant recently and wanted to make my own at home.


I am now addicted to it! Such a great nutritious comfort food packed full of veggies, protein from the tofu, and really does have a bit of everything.


I added a few more veggies than a traditional laksa just to get the extra nutrients in so you can play around with that depending on your taste.


Definitely one to make for a chilly evening!



How do we do it?

Some of the fam aren't great with heat so I left out the chillis and sprinkled some chilli flakes on my bowl once served.

Traditionally you would add fresh chillis to the laksa paste so do add those to your taste :-)


Recipe - Serves 2-3


Laska Paste:

  • 3 Medium Shallots

  • Thumb of Ginger

  • 4 Garlic Cloves

  • 2 Tbsp Oil (I used chilli oil)

  • 2 Lemongrass stalks or 1Tbsp ground Lemongrass

  • 1 tsp Tumeric

  • 1 tsp Ground Corriander

  • 1/2 tsp Cumin

  • 1 tsp Paprika

  • 1 Tbsp Cashew Nuts

Veggies:

  • 4 Spring Onions

  • 1 Carrot

  • 1 Red Pepper

  • Handful Mushrooms

  • Handful French Beans

  • Handful Mangetout


Broth:

  • 1 Tin Coconut Milk

  • 1 Tsp Coconut Sugar

  • 1 Tbsp Soy Sauce

  • Pinch Salt

  • 300ml Stock

  • 1/2 Lime Juice


Extra:

  • 200g Tofu (or use shop bought tofu puffs)

  • 2 Tbsp Cornflour

  • 300g Rice Noodles (or noodles of choice)

  • 2 Tbsp Olive Oil

  • Fresh Corriander

  • Wedge of lime


Method

1. Add all ingredients for the laksa paste to a blender and blend well to create a paste.


3. Pepare your tofu by draining, pressing and cutting into squares. Coat each piece in cornflour and set aside.


2. Next prepare your vegetables by slicing the carrot and pepper into very thin long slices. Slice the mushrooms & spring onions and leave the beans and mangetout whole.


3. Heat 1 Tbsp oil in a pan and add the laksa paste, stir well and fry for around 3 minutes.





4. Add all the ingredients for the broth to the paste and stir well. Bring to the boil then reduce to a low heat and let it simmer.


5. Add all your vegetables in to the broth and stir well to mix.


6. Whilst the vegetables are cooking use a separate pan to heat 1 Tbsp of oil and fry up your tofu, turning to ensure all sides are crispy and cooked.


7. Next prepare your noodles as per packet instructions, I used 'straight to wok' noodles and just added them straight into the broth. Equally you can boil them and add them into separate bowls ready to pour the broth on top.


8. Once your tofu is cooked add it into the broth mixutre and stir well.


9. Serve in a deep/ramen bowl and garnish with fresh corriander and a wedge of lime.


Tips

I added a couple more veggies than a traditional Laksa just for some extra nutrients but bean sprouts are also a great and common addition if you like those.
