Delicious peanutty Thai curry.

I was inspired to make this dish after having it for the first time recently at a really great thai restaurant. The menu said it was renowned for being the world's greatest dish so I had to try it!
I was trying to pick out all the flavours whilst eating it as it was so so good.
Think I've done a pretty good job on this one, it's delicious! I added in some extra veggies to get those nutrients.
A great one for a weekend treat or batch cook ready for a busy week ahead!
How do we do it?
Nutty, creamy and full of punchy flavours.
Recipe - serves 6 | Cals c.333 per serving
Curry Paste:
1/2 Cup Roast Peanuts
1 Tbsp Ground Corriander
1 tsp Cumin
1/8 tsp Ground Cloves
Sprinkle Nutmeg
Sprinkle Salt & Blak Pepper
1 tsp Tumeric
Sprinkle Chilli Flakes (use fresh chilli if you like heat!)
1 Tbsp/1 Stalk Lemon Grass
4-5 Garlic Cloves
1 tsp Lime Rind
1/2 Cup Soy Sauce
1/4 Cup Maple Syrup
1 Tbsp Vegan Fish Sauce
1/4 tsp Ground Cardamom
Other:
1 Tin Coconut Milk
2 Sweet Potatoes
1 Can Chickpeas
1 Red Pepper
1 Red Onion
1 Large Carrot
100g Mushrooms

Method
1. Add all ingredients for the curry paste to a blender and blend well until you create a smooth paste. Set aside.
2. Peel sweet potatoes and cut into cubes, then roughly chop all other vegetables.
3. Heat coconut milk in a large pan and add the curry paste, stirring well.
4. Next add in sweet potatoes and cook for around 5 minutes so they begin to soften.
5. Add in the chickpeas and all other vegetables and let simmer until the vegetables soften and the sauce thickens.
6. Serve with crushed peanuts, a slice of lime and topped with fresh corriander. Great paired with rice or noodles. Enjoy!
7. Store in an airtight container and eat within 3 days.

Tips
This curry freezes well so great to make a batch ready for those busy weeks!
If you are reheating it, ensure it's piping hot before serving.
I didn't make this curry too hot, so if you do like some heat add in some fresh chilli peppers. If you really like nuts in your curry feel free to add a few extras into the pan with your vegetables as well as in the curry paste.
