Healthy Oat Cookies

Delicious, versatile and healthy!

These cookies are absolute winners in our house and I'm happy for the kiddies to eat as many as they want as I know it's all good ingredients!
They're really quick and easy to make so also a great chance to get the little ones invoved in some baking.
How do we do it?
One of my favourite healthy, sweet treats to whip up when we get those little cravings creep in!
Recipe - makes 7-8 cookies
1 Banana
1 Cup Oats
1 Tbsp Maple Syrup
1 Tbsp Coconut Oil
Sprinkle Cinnamon
Handful Raisins
1 Ball Stem Ginger

Method
1. Preheat the oven to 180°.
2. In a large bowl mash the banana.
3. Add the oats, maple syrup, melted cocout oil and cinnamon and stir well.
4. Add the raisins and roughly chopped ball of stem ginger, stir well to combine all ingredients.
5. Line a baking tray with baking paper.
6. Spoon a table spoon of the mixture at a time onto the baking tray and press down to create a cookie shape and to ensure the mixture is nicely stuck together.
7. Cook until golden on the outside. Eat and enjoy!
Tips
These cookies are so versatile, feel free to add vegan chocolate chips, dried fruit or nuts.
Keep an eye on them in the oven so that the raisins do not burn
