Lemon & Chia Bliss Balls

Zingy, healthy treats!

I'm a big fan of lemon flavour treats, cakes, cookies and bliss balls!
These bliss balls aren't too rich and the lemon gives them such a good, fresh taste.
The chia seeds and almonds give them a good crunch aswell!
Super quick and easy to make, you can get the kiddies invovled in these too and they can pretty much eat them right away!
Great for a quick healthy snack on the go.
How do we do it?
Give these zesty, sweet treats a go.
Recipe - Makes around 8-10
1 Cup Oats
14 Dates (10 Medjool Dates)
1 Lemon (Juice)
1 Tbsp Chia
Handful Almonds

Method
1. Add all ingredients to a blender and pulse until all well combined.
2. The mixture should be wet enough from the lemon juice but if it feels too dry add a sprinking of water.
3. Take a tablespoon of the mixture and roll into balls.
4. Refrigerate for around 30 minutes and then they are ready to eat!
5. Store in the fridge in an air tight container.

Tips
You can grate a little zest into the mixture to make it extra lemony and zingy :-)
Gluten free oats work just as well, I often use those. Sometimes you may need to blend them up a little before adding any of the other ingredients to ensure they breakdown enough.
These keep really well and will last a good while if you keep them in an air tight container in the fridge!
