Moroccon Couscous

A colourful bowl of goodness!


I love the flavours in this dish. It's really colourful and punchy. Full of sweetness from the raisins and cinnamon with the savoury hit of the lemon and veggies.


This is a really easy dish to make and won't take long with little preparation.


A delicious one for mid-week!



How do we do it?

A beautiful bowl of flavour!


Recipe - serves 3-4

Veggies:

  • 1 Courgette

  • 1/2 Aubergine

  • 1 Red Onion

  • 2 Carrots

  • Handful Plumb Tomatoes

  • Handful Brocoli

  • Drizzle Olive Oil

Couscous:

  • 100g Couscous

  • 250ml Water/Stock

  • Pinch Salt

  • 1/2 tsp Tumeric

  • 1/2 Cup Raisins/Saltanas

Seasoning:

  • 2 Tbsp Olive Oil

  • 1 tsp Garlic Powder

  • 1/2 tsp Cumin

  • 1/2 tsp Ground Corriander

  • 1/2 tsp Cinnamon

  • Pinch Salt

  • 2 Tbsp Fresh Lemon Juice (lime works well also)

Extras:

  • 1 Can Chickpeas

  • Sprinkle Fresh Mint Leaves

  • 1/4 Cup Toasted Flaked Almonds

  • Sprinkle Fresh Corriander


Method

1. Preheat oven to 180°C.


2. Roughly chop all veggies, place in an oven proof dish, drizzle with oil and roast in the oven until all softened.


3. Next prepare your couscous. In a pan heat water/stock, add in tumeric and pinch of salt.


4. In a large bowl add couscous and raisins/sultanas then pour over your boiled water/stock. Cover bowl with a kitchen towel and let it rest to soak up the liquid.


5. In a small bowl add together all the ingredients for the seasoning, stir well to combine and then pour over the couscous, use a spoon to fold in and mix well.


6. Next add the roasted veggies and the chickpeas to your couscous and combine well.


7. Toast your almond flakes under the grill until slightly browned then sprinkle into the couscous and mix well.


8. Sprinkle with chopped fresh mint and corriander, then enjoy!


Tips


Feel free to play around with the veggies you use in this dish, use what you have available and what you like!


Make the seasoning to your taste, add more or less of the spices if needed.
