Mushroom & Pecan Sausage Rolls

Gorgeous wintery treats!

Who doesn't love a sausage roll!


These are full of those deep wintery, comforting flavours, such a great combination and I love the addition of the pecans!


I made these for Christmas last year and they went down a treat with the whole family.


Definitely one to make for a chilly evening and perfect for Christmas gatherings too!






How do we do it?

Crunchy pecans, delicious mushrooms and crisp, flaky pastry...let's do this!


Recipe - Makes c.15-18 small rolls


  • 250g Mushrooms

  • 1 Red Onion

  • 1 Tbsp Olive Oil/Coconut Oil

  • Pinch Salt

  • Handful Pecans

  • 1 Tbsp Rosemary

  • 1 tsp Sage

  • 2 Cloves Garlic

  • 1/2 Cup Red Wine

  • 1 Sheet Puff Pastry


Method

1. Preheat oven to 180°C and prepare a baking tray with greaseproof paper.


2. Finely chop onion. Heat oil in a pan and add in chopped onion with a pinch of salt and crushed garlic cloves. Lightly fry until the onions begin to become more translucent.


3. Add in finely chopped mushrooms, rosemary and sage and stir well. Fry for around 5 minutes.


4. Next crush the pecans into smaller pieces and drop them into the mixture. Pour in the wine and let the mixture simmer until the wine evapourates.


5. Once the wine has evapourated remove the pan from the heat.


6. Take your sheet of puff pastry and cut in half lenght ways so you have 2 strips.


7. Spoon half of the mixture long ways down the centre of one of the strips of pastry then pinch the edges of the pastry together to create one long 'sausage' shape. Taking a fork to score the edge of the pastry often helps keep it stuck together whilst cooking. Repeat with the other half of the pastry sheet and mixture.


8. Brush the pastry with plant based milk then use a fork to prick holes all the way along. Cut each 'sausage' into smaller rolls, I usually get around 8-9 out of each long roll.


9. Lay your rolls on your prepared baking tray and bake in the oven until the pastry is puffed and golden brown.


10. Store in an airtight container and enjoy!

Tips

The sausage rolls will keep well for around 3 days. They can be re heated in the oven to make the pastry crispy again.
