Peanut Butter Banana Bread

Peanut Butter & Banana...what's not to love!


I made this recipe by combining two ingredients I am obsessed with and guess what, it works so well!


This is such a nice treat. Thick, stodgey and nutty. The flavours are insane.


I can't make this very often otherwise I think I'll turn into a piece of peanut butter banana bread.


How do we do it?

You just need to make this, honestly, go do it and get it in your face with a nice cuppa.


Recipe

  • 4 Ripe Bananas

  • 3 Tbsp Peanut Butter (smooth works best for mixing)

  • 1/4 Cup Coconut Oil (vegetable oil also works)

  • 1/4 Cup Plant Based Milk ( I used almond)

  • 1/2 Cup Brown Sugar (coconut sugar also works)

  • 2 Cups Plain Flour

  • 2 tsp Vanilla Extract

  • 1 tsp Cinnamon

  • 1 tsp Baking Soda


Method

1. Heat oven to 180°C.


2. Mash the bananas in a mixing bowl, add peanut butter and stir well to combine.


3. Add in the rest of the ingredients and mix well to ensure everything is combined.


4. Grease a loaf tin and pour in your cake batter. You can decorate the top of your cake batter with extra slices of banana.


5. Place on the top shelf of the oven and cook for around 45minutes.


6. When the top is nice and browned, cover the cake with foil and cook for another 15-20 minutes.


7. Insert a clean knife into the centre of the cake, if it comes out clean or with a few crumbs the cake is ready, if not, then leave a little longer.


8. Remove tin from oven, tip the cake out of the loaf tin and place on a cooling rack.


9. Once cooled cut into slices and enjoy!


Tips

You can replace some of the ingredients with alternatives such as the oil and sugar etc so you can use what you have in the cupboards!


Smooth peanut butter works best for mixing in, the natural kind - ensure it's 100% peanuts and no palm oil!




If decorating the top of the cake with banana, ensure you press it down slighly into the batter


Keep an eye on the cake when it's cooking. It's quite a thick consistency so will take a while to cook through. Give it enough time and ensure you check it with a knife before removing from oven. Using the foil will help the centre cook whilst protecting the top from burning.
