Pecan & Biscoff Blondies

Delicious, wintery treats!

These are great little winter treats full of delicious flavours with the pecans and crunchy biscoff!


Pecans and biscoff are a great combination and really compliment one another. These flavours remind me of cosy evenings in front of the fire.


Definitely a great one for the holidays so go and get making this week and treat yourself!


Nice and simple to make and done in no time at all so you can get snacking!



How do we do it?

Arm yourself with great ingredients and let's do this!!

I used a 17cm x 28cm brownie tin/dish for this recipe.


Recipe - Makes around 16 slices

  • 2 Flax Eggs (2 Tbsp ground Flax seed + 6 Tbsp Water)

  • 1 1/2 Cups Coconut Sugar

  • 2 Tbsp Vanilla Paste or 1 Tbsp Vanilla Extract

  • 1 Cup Vegan Butter (melted)

  • 2 Tbsp Biscoff Spread

  • 370g Plain Flour

  • 1 tsp Baking Powder

  • 1/2 tsp Salt

  • Handful Pecan Nuts

  • 5 Biscoff Biscuits (more for decorting)

  • 200g Vegan White Chocolate


Method


1. Preheat oven to 180°C and prepare your brownie tin/ oven proof dish by lining it with baking paper.


2. Prepare flax egg by mixing milled flax seed with water and let it stand for 5 minutes or so.


3. In a bowl add sugar, flour, vanilla paste/essence, butter, baking powder and salt. Mix well to combine all ingredients.


4. Add in the flax egg and stir well to combine.



5. Next add in white chocolate, crushed biscuits and pecans. Either use white chocolate chips or break up a bar of white chocolate.


6. Place your blondie mix in your prepared dish and spread evenly, you can place some more chocolate chip/chunks in the top of the mixture as well as decorate with extra biscoff biscuits before then placing it in the oven for around 25minutes. Keep checking your blondies by inserting a knife in the centre. Once the knife comes out clean or with just a few crumbs the blondies are ready!


7. Remove blondies from the oven and let them cool.


8. Cut into squares and store in an airtight container and enjoy! Also suitable for freezing.


Tips


You can find vegan white chocolate in the supermarket, usually in the free from section. Aldi have started doing a great range of vegan chocolate for £1.50 for a large bar.


The blondies freeze and defrost well so they are great to make in a big batch!
