Protein Peanut Butter Cups

Rich, nutty treats!

Chocolate protein, cacao powder, coconut oil & peanut butter...what is not to love!
I love making healthy treats, these are super rich so they really satisfy those sweet cravings.
They are super quick to whizz up and don't require loads of ingredients.
Feel free to swap the peanut butter with any nut butter of your choice!
How do we do it?
Decadent, rich and nutty...you will love these!
Recipe - Makes 8-9
2 Cups Coconut Oil
2 Cups Chocolate Protein Powder ( I use Arbonne)
1 Cup Cacao Powder
Smooth Peanut Butter ( 1Tbsp per cup)
2 Tbsp Maple syrup (optional)

Method
1. Melt coconut oil in a pan.
2. Add chocolate protein powder & cacao and stir well.
3. If you want to add a little more sweetness, add in maple syrup.
4. Remove from heat and let cool a little.
5. Set out 8 silicon cupcake moulds, I set mine in a muffin tray.
6. Pour in the mixture to each cup cake mould, filling around 1/4 of each mould. Let this cool so that the peanut butter doesn't sink too much in the next stage!
7. Spoon in 1Tbsp of peanut butter into each mould then top each one with the rest of the chocolate to cover the peanut butter.
8. Refrigerate until solid.
9. Remove from moulds and store in an airtight container in the fridge. Enjoy!

Tips
I tend to prefer using smooth peanut butter as it is easier to mix into the cups, feel free to use crunchy or your choice of nut butter.
If you don't have cacao poweder or prefer something sweeter, cocoa powder will also work.
You can also sweeten it up by popping in a couple of tablespoons of maple syrup/agave/date syrup etc into the chocolate mix :-)
