Raw Carrot Cake Bites

Raw treats that taste like delicious carrot cake!

Carrot cake is absolutely my favourite cake ever so anything that has those flavours is good in my book.


Creating a raw version with a cashew frosting is spot on and a little healthier than a baked cake too!

How do we do it?

Full of spiced goodness! I used a 17cm x 28cm dish.


Recipe - makes 14-16 squares


Base

  • 4 Medium Carrots Grated

  • 28 Dates (20 if using medjool)

  • 1 Cup Pecans

  • 2 Cup Oats

  • 2 tsp Cinnamon


Frosting

  • 2 Cups Cashews

  • 2 Tbsp Lemon Juice

  • 2 tsp Vanilla Paste (extract will also work)

  • 3/4 Cup Icing Sugar

  • 1/4 Cup Plant Milk

  • 1 Tbsp Maple Syrup

  • 1/4 Cup Coconut Oil


Method


1.Soak the cashews in a bowl of water for 2-3 hours.


2. Add grated carrot, dates, pecans, oats and cinnamon to a blender.


3. Blend well so all ingredients are well combined and the mixture starts to clump together.


4. Line a brownie tin or oven dish with baking paper. Place ingredients in the dish and press down evenly to cover the bottom of the dish.




5. Refrigerate for 1 hour.


6. Now onto the cashew frosting. Add all ingredients to a blender and mix well. If the mixture seems too thick for blending add a little more plant milk. You don't want it too runny though as you need it to set.


7. Once all frosting ingredients are ready, remove base from the refrigerator, pour over the frosting and spread evenly.


8. Decorate with pecans (optional) and return to the refrigerator for 2-3 hours or until the frosting is set.


9. Remove from the fridge, cut into slices and enjoy!


10. Store in the refrigerator in an air tight container.





Tips


If your base mixture seems a little too dry you can add a very small amount of plant milk and mix well, you don't want them too sticky though.


However if the mixture feels a little too sticky from the water in the carrots you can add some more oats to help dry it out a little. You want the ingredients to combine together well.


With your frosting you can use vanilla essence or vanilla paste and add it to your taste. You don't want the mixture too runny as it needs to be spreadable, however if the blender is struggling to create a smooth frosting then you can add in a little more plant milk.


Allow ample refrigeration time for the frosting to set, I know it's hard but be patient, they are worth the wait!
