Tasty Refried Beans

Perfect for tortillas, burritos, nachos and more!

I recently realised how much I like refried beans and you can use them in so many different dishes!


They are super easy to make and great for nachos, burritos, as a dip, with fajitas and more!


These will only take about 10-15 minutes to make and are packed full of flavour and a great protein source from the beans.

How do we do it?

Not the prettiest of dishes but certainly a delicious and protein packed one!


Recipe - serves 2 | c.200 cals per serving

  • 1/2 White Onion

  • 1 Tbsp Olive Oil

  • Pinch Salt

  • 2-3 Garlic Cloves

  • Sprinkle of Cayenne Pepper

  • 1/4 tsp Cumin

  • 1 Tin Pinto Beans

  • 1/4 Cup Water

  • 1 Tbsp Fresh Corriander

  • 1/2 Lime Juice


Method

1. Heat olive oil in a pan. Finely chop the onion and fry in the oil with a pinch of salt and the garlic until the onions start to become translucent- around 5 minutes.


2. Next add the spices and stir well for around 30 seconds.


3. Drain the beans and add into the pan along with the water. Stir well.


4. Place a lid on top of the pan and let the beans simmer for around 5 minutes.


5. Mash the beans until you get your desired consistency and cook for a further 3-5 minutes stirring regularly.



6. Add in the coriander and lime juice, stir well. Add a drizzle of water if the beans seem a little too dry and add more salt to taste.


7. Serve and enjoy! Store in the refrigerator in an airtight container.



Tips

Chop the onion finely particularly if you like a smooth consistency for your beans.


Make the beans to your tatse so feel free to play around with the salt, lime juice and spices.


If you don't have pinto beans, black beans can work well too.


If reheating, ensure the beans are piping hot.
