Roast Veg Quinoa & Tahini Drizzle

A big bowl of deliciousness with a creamy tahini drizzle.


This is such a gorgeous dish full of flavour and colour.


A wonderful warming plate which also works so well as a delicious cold salad the next day!


The tahini recipe gives this dish such a cheesy flavour and creamy texture, it really is a good one.


Takes no time at all and doesn't require any fancy ingredients.


How do we do it?

Choose your favourite veggies to roast and off you go! I've listed the veggies I used this time around but feel free to swap some of your favourites in.


Recipe - Serves 2-3

  • 1 Courgette

  • 1/2 Red Onion

  • Handful Mushrooms

  • 1 Red Pepper

  • 1 Carrot

  • Handful Broccoli

  • 1/2 Butternut Squash

  • 1 Packet Chestnuts

  • 1 Large Beetroot

  • Drizzle Olive Oil/Coconut Oil

  • 1/2 tsp Garlic Powder

  • 1 Cup Quinoa

  • 500ml Veg Stock

  • 3/4 Cup Tahini

  • 1 tsp Soy Sauce/Tamari

  • 1 Tbsp Olive Oil

  • 1 tsp Harissa seasoning

  • Sprinkle Chilli Flakes


Method

1. Heat oven to 180°C.


2. Roughly chop all veggies and place in a roasting dish. Drizzle with olive/coconut oil, sprinkle over garlic powder and stir to ensure all veggie pieces are covered.


3. Pop in the oven and cook until all veggies are soft.


4. Next, prepare your quinoa. Cook quinoa in a pan with the vegetable stock until the liquid is absorbed and quinoa is softened.


5. Keep an eye on your veggies and quinoa!


6. Whilst you are waiting for you quinoa and veggies to cook, you can prepare the tahini dressing.


7. In a bowl add tahini, oil, soy sauce, harissa and chilli flakes and stir to combine. Add a little water to thin it out and keep stirring and adding until you get your desired consistency.


8. Place quinoa in serving bowls, top with roasted veggies and drizzle over the tahini dressing. Serve with a wedge of lemon and enjoy!!



Tips

Ensure you chop harder veggies such as butternut squash into smaller pieces so you can roast them all together and they cook simultaneously.


Play around with the veggies, use what you have available!


Use cold water to thin out your tahini dressing!
