Roasted Veggie Orzo

Creamy comfort food!

Roast veggies are one of my absolute favourite things to cook and eat. Paired with oat cream and delicious orzo, this dish is a total winner.
I'm a big fan of orzo, it's a great comfort food but feels a little lighter than other forms of pasta.
This went down a treat with the whole family so go and try it!
How do we do it?
Simple, creamy and packed full of veggies, definitely give this one a go!
Recipe - Serves 2 -3
1 Cup Orzo
1 Red Pepper
1/2 Courgette
1 Tomato
2 Garlic Cloves
100g Mushrooms
Handful Broccoli
1 Carrot
Sprinkle of Rosemary
Drizzle Olive Oil
For the Creamy Sauce
1/2 White Onion
1 Tbsp Coconut/Olive Oil
200ml Oatly Cream
1 tsp Garlic Powder
1 Tbsp Nutritional Yeast
8-10 Black Olives
4 Sundried Tomatoes
1/2 Lemon (Juice)
Handful of Spinach

Method
1. Pre heat oven to 180°C.
2. Cook Orzo as per packet instructions.
3. Roughly chop pepper,courgette, tomato, garlic cloves, mushrooms, broccoli and carrot.
4. Place all chopped vegetables in an oven proof dish, sprinkle with rosemary and drizzle with olive oil. Roast in the oven for around 20-25 minutes.
5. Whilst the orzo and veggies are cooking, we move on to prepare our creamy sauce!
6. Finely chop onion, add oil to a pan and fry up with a pinch of salt until the onion softens.
7. Once your onion is ready, add in oat cream, garlic powder and nutritional yeast, stir well to combine.
8. Check your orzo and veggies! If they are done then set aside.
9. Back to the sauce! Squeeze in the juice of half a lemon, add in your olives and chopped sundried tomatoes and stir well.
10. Add your veggies and orzo into the sauce and stir well to combine.
11. Drop in a handful of spinach and stir until wilted. 12. Season with black pepper & serve with a wedge of lemon. Enjoy!

Tips
Keep an eye on your orzo so it doesn't over cook and go too soft.
Feel free to drop in a pinch of salt to the boiling water for cooking.
I love my pasta really saucy and creamy so feel free to add more or less oat cream depending on what you like!
