Rocky Road Brownies

So many delicious flavours and textures!

You can't beat a bit of rocky road... sweet raisins, crunchy biscuit and squidgy marshmellow!
These are really rich and decadent, such a nice treat with a hot cuppa.

How do we do it?
Biscuit, chocolate, marshmellows and raisins...let's go! I used a 17cm x 28cm oven proof dish for this recipe.
Recipe - makes around 16
3 Ripe Bananas
1 Tsp Vanilla Paste/Extract
220g Vegan Butter
200g Cocoa Powder
2 Tbsp Almond Milk
400g Coconut Sugar
150g Plain Flour
Sprinkle Salt
100g Vegan Milk Chocolate Chips/Chunks
5 Vegan Rich Tea Biscuits (or similar, have extra for decoration)
Handful Raisins
Handful Vegan Marshmellow (have extra for decoration)

Method
1. Preheat oven to 180°C and prepare your brownie tin/ oven proof dish by lining it with baking paper.
2. Mash bananas in a bowl and add in vanilla essence/paste.
3. Melt butter on a low heat, stir well until it has completely melted. Add the cocoa powder to the butter and stir constantly until well combined.
4. Next, add your bananas to the mix and stir well. Add sugar and milk and stir well to ensure all ingredients are combined.
5. Add the flour and pinch of salt to the rest of the mixture and stir well. Once everything is combined add in your chocolate chips/chunks. Crush in the biscuits, add marshmellows and raisins, stirring well to combine.
6. Pour the brownie batter into your prepared tin. Use some extra biscuits and marshmellows to decorate the top of the batter, pushing them slightly down into the mixture.
7. Place brownies in the over for around 40 minutes.
8. Once the brownies are cooked through, remove from the oven and let cool. Once cooled, cut into squares and enjoy!
9. Store in an airtight container. Also suitable for freezing.

Tips
If you don't have coconut sugar you can use brown sugar. You can also use any other plant milk if you don't have almond.
I used vegan milk chocolate chunks but feel free to use dark chocolate.
Ensure your biscuits and marshmellows are vegan!
