Satay Stir Fry

Delicious, peanutty and full of veggies!


I could eat satay sauce every day of the week for breakfast, lunch and dinner!! I had the best satay sauce of my life in Bali a few years ago, the chef actaully gave us some to take home with us and I've been trying to match up to that ever since!!

Pair this up with some nutritious veggies, noodles or rice for a quick and tasty mid week meal.


How do we do it?

Pair this delicious sauce up with some nutritious veggies, noodles or rice!


Recipe - Serves 1


Satay Sauce:

  • 1 Tbsp Soy Sauce/Tamari

  • 1 Tbsp Maple Syrup (agave/date syrup also works)

  • 1/2 Lime Juice

  • 3-4 Tbsp Peanut Butter

  • 2 Garlic Cloves

  • 1 tsp Ground Corriander

  • 1 tsp Fresh Ginger

  • 1/2 Cup Coconut Milk

  • Sprinkle Chilli Flakes

Veggies:

Any of your choice, I used:

  • 1 Tbsp Coconut/Olive Oil

  • 1/2 White Onion

  • Handful Broccoli

  • 1 Carrot

  • 1/2 Pepper

  • 1/2 Courgette

  • 1 Small Sweet Potato

  • Handful Spinach

  • Crushed Peanuts to Garnish.

  • Sesame Seeds to Garnish


Method

1. In a blender add all ingredients for the satay sauce. Crush the garlic before adding to the blender and chop your ginger also.


2. Next roughly chop onion, add oil to the pan and fry onions until they become translucent.



3. Roughly chop the rest of the vegetables (excluding the Spinach) and add to the pan and fry until they soften. I used a peeler for the sweet potato to create thin ribbons for frying.


4. Once the veggies are done pour over the sauce and stir well to cover.


5. Serve on a bed of rice or noodles - I used buckwheat noodles.


6. Garnish with crushed peanuts and sesame seeds. Enjoy!


Tips

If you like a little spice feel free to add a chilli pepper to the peanut sauce.


I tend to not add salt to my dishes so again feel free to add salt to the sauce or on your veggies.


For your sauce, ensure everything is blended up really well so it's nice and smooth!
