Sticky Aubergine Fried Rice

Sticky, delicious and full of veggies!


I love the combination of flavours in this dish. Packed full of veg with the sticky aubergine on top, it's a real winner and nice filling meal too.


The aubergine is amazing, boiling it first then frying it creates a really great texture and then the sauce just tops it off!



Feel free to adapt this to whatever veggies you've got at home for the stir fry, I've listed what I used on this occasion but so many others would work really well too.

How do we do it?

Sticky, full of flavour and a great texture, here we go!


Recipe - Serves 2


Fried Rice

  • 1 Cup Brown Rice (or rice of your choice)

  • 1 Tbsp Coconut Oil

  • 1/2 White Onion

  • 1 Leek

  • 2 Garlic Cloves

  • Thumb Ginger

  • 1/2 Courgette

  • 1/2 Tin Sweetcorn

  • 1/2 Red Pepper

  • 150g Mushrooms

  • 2 tsp Chinese 5 Spice

  • Drizzle Sesame Oil


Sticky Aubergine

  • 1 Aubergine

  • 3 Tbsp Soy Sauce/Tamari

  • 1 Tbsp Maple Syrup

  • 1 tsp Garlic Powder

  • 1 Tbsp Cornflour

  • 1 tsp Sriracha

  • 2 Tbsp Water

  • 1 Tbsp Coconut/Olive Oil


Method

1. Wash your rice and boil on the hob.


2. Roughly chop your aubergine and boil in water for around 10 minutes. Feel free to add a pinch of salt to the water.


3. Whilst your rice and aubergine are boiling, roughly chop all your vegetables.


4. Heat oil in a wok,add in the onion, pinch of salt and leeks then fry until the onion begins to become translucent. Add the garlic and ginger.


5. Fry for another couple of minutes then add in all the rest of the veg and fry up together.


6. Drain your aubergine and dry it off well. Wrap it in kitchen towel to absorb the water. Set aside.


7. Prepare your sauce by adding the soy sauce/tamari, garlic, maple syrup, cornflour, sriracha and water together. I use a jar and then shake it well to combine.


8. Once your rice is done, drain well and add it to the veggies and stir well. Add in chinese 5 spice and a drizzle of sesame oil. Stir well and keep on a low heat.


9. Heat oil in a separate pan, add aubergine and pour over the sauce.


10. Stir well to cover all aubergine and fry until the sauce thickens and you have your sticky aubergine! 11. Serve rice in a bowl, pop the aubergine on top and garnish with spring onion and sesame seeds. Enjoy!


Tips

Keep an eye on your aubergine and be sure not to over boil it so it's too soft.


Ensure you drain it well before frying so it isn't too watery. Wrap it up in kitchen towel and press the water out.


Use whatever veggies you have available to you for your stir fry, pretty much anything goes!
