Vegan Smoked 'Salmon'

An incredible, healthy substitute for smoked salmon!


I think smoked salmon has been one of the flavours I have missed the most since going plant based. I loved a smoked salmon and cream cheese bagel as a weekend treat.


I'm super happy to have made such a great plant based alternative. It really does taste like smoked salmon!


Paired with some toasted sourdough, vegan cream cheese and cucumber, it is perfect!

Go get making for a lovely weekend brunch.


How do we do it?

Smokey veggie deliciousness...


Recipe - Serves 2

  • 2 Medium Carrots

  • 2 Tbsp Olive Oil

  • 2 tsp Soya Sauce/Tamari

  • 1 tsp Rice Vinegar

  • 1 tsp Caper Brine

  • 1 tsp Liquid Smoke

  • Sprinkle Sea Salt


Method


1. Mix oil, soy sauce, rice vinegar, caper brine, liquid smoke and sea salt together in a bowl.


2. Peel carrots and slice in to thin strips using a vegetable peeler.


3. Boil a pan of water on the hob and add carrot strips. Boil for around 3 minutes to slighty soften.


4. Remove carrots from the water and dry off using kitchen towel.


5. Once the carrots are dry add them to the bowl with your marinade and stir well to cover all carrot.


6. Leave to marinade for several hours or overnight.


7. Once ready, you can use in salads, in bagels or on sourdough with vegan cream cheese.

Tips


Don't over boil the carrots, you only want them to be slightly soft and not break apart.


Definitely ensure you leave the carrots to marinade for long enough so they really take on the smokey flavours.


There are some great vegan cream cheeses around now to create a plant based version of smoked salmon and cream cheese bagels or toast.
