Cashew, Coconut & Lime Rice

Nutritious & delicious stir fried rice.


A nice refreshing and filling dish packed full of flavour and creamy cashews!


This was another hit with the kiddies plus a great dish to use up those veggies you have in the fridge as pretty much anything goes with this one.


I love adding lime to dishes it really lifts the flavour and gives it a punch.


How do we do it?

A hearty dish with refreshing flavours, I love this one. Feel free to take out the sriracha for little tummies or if you're not a spicey fan!


Recipe - Serves 4

  • 2 Cups Brown Rice

  • 1 Can Coconut Milk

  • 1 Tbsp Sesame Oil

  • 1 White Onion

  • Pinch Salt

  • 3 Garlic Cloves

  • Thumb Fresh Ginger

  • 200g Mushrooms

  • 1 Pepper

  • Handful Broccoli

  • 2 Carrots

  • 1 Cup Peas

  • 1 Courgette

  • 2 Spring Onions

  • 1 Cup Cashews

  • 1 Tbsp Maple Syrup

  • 1 Tbsp Sriracha

  • 1 Tbsp Coconut Sugar

  • 1 Tbsp Soy Sauce/Tamari

  • Juice 1/2 Lime


Method

1. Wash rice and boil in a pan.


2. When the rice begins to soften and a majority of the water has evapourated, pour in can of coconut milk, turn the heat on low and let the rice boil in the milk.


3. Heat sesame oil in wok.


4. Roughly chop white onion and add to hot oil, along with a pich salt, garlic and ginger. Fry until onions start to brown.


5. Roughly dice all other vegetables and add to the wok. Stir well.


6. Add cashews, maple syrup, coconut sugar, soy sauce/tamari and sriracha, stir well and cook for around 5 minutes until cashews are slightly golden.


7. Next, mix the rice into the vegetables, stir well and drizzle in the lime juice.


8. Serve with a sprinkling of sesame seeds, wedge of lime and spring onions.


Tips

Don’t add the cashews too early as they can burn quite easily. You may decide to roast them separately to the vegetables and add them in right at the end before serving.


Don't let the rice over cook in the water then continue over cooking in the milk. Keep checking it throughout the cooking process.
