Roasted Red Pepper Hummus

Delicious, versatile and healthy!

I think this has to be my favourite flavour of hummus. I'm a big hummus fan but I had never made my own until last year.
It is so quick and easy, you know exactly what is going into it (no nasties!) and it's cheaper than shop bought by far. Once you start making your own you'll never buy it again!!
How do we do it?
I love having hummus in the fridge at all times for when you get a snack attack. I could eat it all day! It's time to make your own as it is so easy and you can make it to your taste. This one is super creamy and delicious.
Recipe
1 Rep Pepper
4 Tbsps Tahini
Juice of Half a Lemon
Pinch of Salt
2 Garlic Cloves
1 Tbsp Olive Oil
1/2 tsp Cumin
1/2 tsp Smoked Paprika
1 Can of Chickpeas

Method
1. Pre heat the oven to 200°C. Chop the red pepper in half and remove seeds and stalk. Drizzle with olive oil and roast in the oven for around 15-20 minutes until the skin darkens and the pepper softens.
2. Spoon tahini into a blender, squeeze in lemon juice and add a pinch of salt. Blend until mixed.
3. Next add in garlic cloves and olive oil and continue blending.
3. Add cumin, paprika and chickpeas, blend until everything is well mixed.
4. Add the pepper and continue to blend. If the consistency is too thick you can add a little more olive oil or add water. Add this a little at a time as it can easily become too runny.
5. Once you have your desired consistency, store the hummus in an air tight container and consume within around 3-4 days.

Tips
Hummus is so easy to make you can literally chuck all ingredients in and whizz it up. However, I have found that I have achieved a better consistency following the steps above but you'll still get great tasting hummus if you blend it all at once.
You can play around with the amount of spices and the variety of spices you use. Take out the red pepper for plain, traditional hummus.
If you want an even smoother consistency you can peel the chickpeas to remove the outer skin.
Enjoy on salads, with crudités, pitta, crisps and more!
