Truffle Udon Noodles

Basically a big bowl of heaven!

I am obsessed with the flavour of truffles! I don't cook with them very often as my hubby is the complete opposite and absolutely can't stand the smell or taste!!
So when I make myself this dish it is such a treat and I savour every mouthful!!
The mix of spinach, mushrooms, oat cream and truffle oil is just the best!
How do we do it?
A delicious, creamy, flavoursome dish.
Recipe - Serves 1
1 Tbsp Coconut Oil (olive oil as option)
1/3 White Onion
5 Mushrooms
2 Garlic Cloves
1/2 Thumb Ginger
1/2 Carton Oatly Cream
Handful Spinach
1 Packet Udon Noodles
Drizzle Truffle Oil
Spring onion for topping

Method
1. Heat oil in a wok.
2. Roughly chop onion and fry until they start to become translucent.
3. Add in crushed garlic and stir.
4. Finely chop ginger and add.
5. Roughly chop mushrooms and add to the pan, stirring to combine all ingredients.
6. Once the mushrooms are slightly browned pour in the oat cream and let simmer.
7. Add in spinach and drizzle in truffle oil to taste.
8. Finally add in the noodles and stir to combine everthing well. Let simmer for 5 minutes.
9. Serve with a sprinkle of spring onions. Enjoy!

Tips
I use straight to wok noodles for ease but any thick noodles will work.
You can drizzle the truffle oil over once you have plated your noodles or equally drizzle it whilst your ingredients are still cooking up in the wok.
If you need a little more bulk to this dish you can add some tasty tofu. Check out my Crispy BBQ Tofu.
If you feel you want a little more liquid in the dish, add in more of the oat cream.
